Asian Salad

I started making this salad several years ago, and it quickly became a family favorite. In fact, it has become expected that I bring it to every family get-together, or I would probably be uninvited! I usually double or triple the dressing recipe, so that I have some left over for later. If you don’t have almond slivers, chow mein noodles make a great substitute.

Salad:

  • 2 Bunches of Romain or leaf lettuce
  • 1 Small red onion, thinly sliced
  • 1 large can mandarin oranges, drained
  • 1 lb. fried bacon, crumbled
  • ¾ C toasted almond slivers.

Dressing:

  • 1/3 C Sugar
  • 1/2 T  Lemon Juice
  • 1/2 tsp  Grated onion
  • 1/2 tsp Grated Garlic
  • 1/2 tsp  Paprika
  • 1/2 tsp Salt
  • 2 1/2 T Cider Vinegar
  • 2 1/2 T  Honey
  • 1/2 tsp Dry Mustard
  • 1/2 tsp Celery Seed
  • 1/2 C  Salad Oil

Mix all salad ingredients in a large bowl. Combine all dressing ingredients except oil in a saucepan and heat over medium just until sugar is dissolved. Remove from heat and add oil. Pour into jar and allow to cool. Shake well and dress the salad just before serving.
